Carolina's

This week we found a fabulous restaurant in Phoenix. We have been searching for months for some quality Mexican food. For some reason, Utah has a lot of good Mexican food, (Red/Blue Iguana anyone?) but we haven't found a Red Iguana replacement, until now. We found a place called Carolina's.

Carolina's is in a little neighborhood just off of the airport. I wasn't concerned, but the reviews said to not go there after dark. I'm sure it was a bit of an exaggeration.

If you go there, I would definitely recommend the green burro, the green tamale (it has corn in it!) and the machacho plate. Delicious!
